4 ways to make plant-based eating more exciting - goodhousekeeping.com

Whether you’re a committed vegan or just thinking of eating more plant-based food, you’ve probably heard the likes of “But what can you actually eat?” and “Won’t you be bored?” when discussing your diet.

Clearly those naysayers aren’t clued-up on just how delicious and exciting a vegan diet can be, full of flavour, variety and a rainbow of colour.

If you’re looking for some inspiration, here are four tips on how to kick things up a notch in your plant-based kitchen.

1. Recreate your favourite dishes

Embracing a plant-based diet doesn’t mean leaving your favourite foods behind. If you’re missing meat-based meals, it’s never been easier to swap substitutes and alternative protein sources into your go-to recipes.

Fancy a burger? Try Co-op GRO’s Incredible Burger, which is just as succulent as real meat. Or maybe you’re craving spaghetti Bolognese? Switch to Co-op GRO Tender Mince, made with soya, onions and beetroot, for a hearty, healthy vegan meal.

2. Invest in a tofu press

Tofu is a mainstay of a vegan diet, but not many people have this handy little contraption that makes working with it easier and tastier.

A tofu press works by squeezing out the water from your tofu, leaving you with a denser block. The liquid you’ve drained can then be replaced with flavours from marinades, dressings and sauces.

This simple investment could do wonders for your cooking, turning tofu from tasteless to flavoursome.

3. Host a virtual vegan night

What better way to push you into exploring new plant-based foods and recipes than by hosting a vegan dinner party for your friends and family?

While we might not all be able to come together in person right now, sharing a vegan recipe or all buying the same vegan ready meal to cook for an evening on Zoom could fill the gap. Co-op has an extensive range of plant-based ready meals to choose from, including GRO Katsu Curry and GRO Tomato & Black Olive Bucatini.

Once we’re free to get together again, you could host a plant-based pot luck dinner, where each guest brings a different vegan meal or side for a bright, varied buffet. That way the cooking is shared, but everyone also gets to try a host of exciting new dishes.

4. Change up your lunch options

Vegan options for grab-and-go lunches have tended to be quite limited, to say the least. But now boredom with eating the same thing whenever you're grabbing a midday snack is a thing of the past, thanks to the host of new plant-based lunch options readily available.

The Co-op GRO range has quality options, whatever you’re in the mood for; choose between a crunchy Hoisin Du’k Protein Pot or a spicy Beet Falafel & Giant Cous Cous Salad, or even a herby Sausage Roll, then finish with a sweet Chocolate Cupcake for an afternoon pick-me-up.

We’re suddenly very hungry…
