Lockdown means families are eating breakfast together much more often, so make a real meal of it.
These super start-the-day eats are much more exciting than standard cereal or toast and are packed with mood-boosting nutrients too. So rise and shine with my delicious recipes.
Heart-shaped waffles and warm spiced berries
Serves 4 – £1.91 per portion
Preparation time: 5 minutes.
Cooking time: 10 minutes.
YOU NEED:
- 150g buckwheat flour
- 1tsp baking powder
- 50g oats
- 2 tsp cinnamon
- 400ml coconut milk
- 4 tbsp maple syrup
- 2 tsp coconut oil, for frying
- 500g frozen mixed berries
- ½ tsp ground mixed spice
- 2 pinches of dusting icing sugar, to dust
METHOD: To make the waffle batter, place the buckwheat flour, baking powder, oats, cinnamon and salt in a mixing bowl. Slowly add the coconut milk to the dry ingredients. Whisk constantly to avoid lumps.
Add the 2 tbsp maple syrup, mix well and pour into a measuring jug. Allow to rest for five minutes. To make the warm spiced berries place the frozen mixed berries, 2 tbsp maple syrup and mixed spice in a small pan with a lid.
Heat gently for two minutes, or until warmed through, allowing the berries to keep their shape. To fry the waffles, brush a waffle pan with a little melted coconut oil and heat over a medium heat.
Pour the waffle mix into the pan, spreading evenly, and fry for three to four minutes on each side or until golden brown. Repeat to use all the remaining batter.
Spinach and red pepper egg muffins
Makes 12 – 51p per muffin
Preparation time: 15 minutes.
Cooking time: 25 minutes.
YOU NEED:
- 6 eggs
- 100ml semi-skimmed milk
- 50g cheddar cheese, grated
- 2 handfuls fresh spinach, wilted
- 3 red peppers, finely chopped
METHOD: Preheat the oven to 180C/ 160C fan/gas mark 4. In a large bowl, beat the eggs until smooth. Add in the milk, salt, and cheddar cheese then mix together.
Stir in the spinach and chopped red pepper. Spray a regular 12-cup muffin pan with non-stick cooking spray.
Ladle the egg mixture into each muffin cup until they are three quarters full. Top with additional grated cheese.
Place the muffin tray in the oven and bake for 25 minutes. Once cooked, let them cool for 30 minutes before removing from the pan. Serve and enjoy.
Lime Coconut Boosts
Makes 20 – 40p per ball
Preparation time: 10 minutes.
Cooking time: Not applicable.
YOU NEED:
- 1 cup almonds
- 1 cup cashews
- 3 cups dates
- 6 limes – zest and juice only
- 1 cup desiccated coconut
METHOD: Place the almonds and cashews into a food processor or blender and mix until they are in small pieces.
Do not mix for too long – you do not want the nuts to turn into a paste. Add the dates, lime juice and zest.
Mix until the dates are finely chopped, and the ingredients start to clump together.
Mould the mix into 1½in balls, then roll them in coconut to coat the outside. Keep in an airlock container. Eat and enjoy.
